Named after the Ethiopian wolf, known in Amharic as Ky Kebero. This lot honours one of Africa's most endangered carnivores, with fewer than 500 left in the wild, most in the Bale Mountains west of Yirgacheffe. It comes from the Sidamo region of southern Ethiopia, grown at 1,900–2,100m on Ethiopian Heirloom varieties, the indigenous varietals that grow wild across the country and give Ethiopian coffee its singular character. This lot is fully washed: ripe cherries are hand-picked and floated to sort for quality, de-pulped the same day, fermented for 36–48 hours, then washed clean in grading channels and dried slowly on raised beds for 12–15 days.

Expect lemon, peach, green tea, caramel, and jasmine, carried by a silky, almost ethereal body. Bright and floral with the citric acidity Sidamo is known for.

This single-origin arabica is roasted light to preserve its acidity and aromatics. Best as filter or V60, where the green tea and citrus notes come through clearest.
