The Moka pot is the most honest coffee maker ever built. Cold water in the base, grounds in the basket, heat from below. Steam builds pressure, pushes water upward through the coffee, and fills the upper chamber with something dense and immediate. No paper filters. No electricity. No algorithm.
The Bialetti Moka Express is the original. Alfonso Bialetti designed it in 1933 and it has remained largely unchanged — because there was nothing to improve. The octagonal form distributes heat evenly across the base. The patented safety valve has been working quietly for ninety years.
Size: 3-cup (150ml) or 6-cup (300ml). The 6-cup is the more useful size. Compatible with: Gas and electric stovetops. Requires an induction adapter for induction hobs. Best with: Brazil Tropical Bahia or DRC Congo Mutendero — coffees with body and sweetness that hold up under pressure. Ground medium-fine, slightly coarser than espresso.
