It comes from the \u003cstrong\u003eSidamo region\u003c\/strong\u003e of southern Ethiopia, grown at 1,900–2,100m on Ethiopian Heirloom varieties, the indigenous varietals that grow wild across the country and give Ethiopian coffee its singular character. This lot is fully \u003cstrong\u003ewashed\u003c\/strong\u003e: ripe cherries are hand-picked and floated to sort for quality, de-pulped the same day, fermented for 36–48 hours, then washed clean in grading channels and dried slowly on raised beds for 12–15 days.\u003c\/p\u003e\n\u003cp\u003eExpect \u003cstrong\u003elemon, \u003cmeta charset=\"utf-8\"\u003epeach, green tea, caramel, and jasmine\u003c\/strong\u003e, carried by a silky, almost ethereal body. Bright and floral with the citric acidity Sidamo is known for.\u003c\/p\u003e\n\u003cp\u003eThis single-origin arabica is roasted light to preserve its acidity and aromatics.
